eat: 5 healthy fall recipes

One of my favorite things about Fall is indulging in delicious comfort food. Somewhere between those crack-like pumpkin cookies at the grocery store and all of the Halloween candy, it's easy to loose a grip on maintaining a healthy lifestyle! Don't hide behind over-sized sweaters and boyfriend jeans (tempting though) here are healthier versions of some of my favorite fall foods. You'll be thanking me when October 31st rolls around :)

1. Morning pumpkin smoothie: Skip the pumpkin latte and start your day on a better and equally delicious note! Here is the recipe for this one:

Ice, 1/2 cup organic pumpkin puree, 1 scoop vanilla protein powder (I use Aria), 1 cup vanilla almond milk, 1/2 frozen banana, pinch of cinnamon or pumpkin pie spice - blend and enjoy :)


2. Cheesy Zucchini Quinoa: This is a yummy, easy and healthy substitute for mac & cheese! Recipe HERE. 

3. Roasted Butternut Squash with Warm Cider Vinaigrette: Warm salads are the best for cold nights and this one is full of fall favorites! Recipe HERE.


4. Ruby Salad with Crumbled Feta & Spicy Pepitas: With beets and red cabbage - this bright salad is not only beautiful but chalk full of folate and sulforaphane - which both boost cancer fighting enzymes in your body. Recipe HERE. 


5. Emeril's Turkey and Pinto Bean Chili: I made this the other night and it was SO good. We spiced it up a bit by using 1 tbls cayenne pepper and 2 tbls chili pepper. Spicy foods boost your metabolism and increase the production of endorphins. Recipe HERE.

  2. That salad looks amazing--it combines all of my favorite fall things! I completely agree that it's hard to stay on track once fall hits. Comfort food (and less skimpy clothing) can be all too tempting!
