recipe: chocolate-strawberry cheesecake cupcakes


I was asked to make a dessert for a bridal shower last weekend and I wanted to incorporate cheesecake into a cupcake so I did some research on Pinterest to find a recipe. I didn't find exactly what I was looking for so I ended up combining a couple recipes and adding in some of my own twists. The center of these chocolate cupcakes had a chocolate chip cheesecake filling with fresh strawberries in it and the frosting was a cream cheese frosting that balanced out the sweeter cheesecake filling in the middle. My franken-cupcakes turned out really delicious and I will definitely be making them again! 

Cheesecake center:
1 c. cream cheese
1/3 c. sugar
1 unbeaten egg
1/8 tsp. salt
1 c. mini chocolate chips
1/2 c. diced strawberries 

Chocolate bottom or use boxed chocolate cake mix:
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/4 c. cocoa
1 c. water
1/3 c. oil
1 T. white vinegar
1 tsp. vanilla

Prepare the cheesecake center:
1.  Combine cream cheese, 1/3 cup sugar, egg, and 1/8 teaspoon salt in a small bowl.  Beat well.

2.  Stir in mini chocolate chips and diced strawberries.  Set aside.

Prepare the chocolate bottom (you can use chocolate cake mix from a box instead):
3.  In a large bowl, combine flour, baking soda, 1 cup sugar, 1/2 teaspoon salt, and cocoa.  Add water, vinegar, oil, and vanilla; stir to combine.

4.  Line a muffin pan with paper cupcake liners.  Fill each cup 1/3 full of chocolate batter.  Top each with a heaping teaspoon of cream cheese mixture. I added in a little more batter to some of the cupcakes to make sure the cup was 3/4 of the way full. 

5.  Bake at 350 degrees for 25-30 minutes.  Makes about 28 cupcakes. 


Cream Cheese Frosting:
16 oz. cream cheese 
2 sticks of unsalted butter 
3 3/4 c. powdered sugar
1 tsp. vanilla extract

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth.  Add the sugar slowly in small batches, beating on low speed until incorporated.  Once all sugar has been added, increase the speed to high and mix until light and fluffy. When ready to serve, spread icing on cupcakes or use a pastry bag with a star tip.  Garnish with freshly cut strawberries.
